The Phoenix Mountains of Chao Zhou, in the Guangdong province of China is the home and birthplace of Dancong Oolong, some of the most exquisite and aromatic teas in the world.

Phoenix Honey Orchid Red Black Tea

Taking the one of the most popular Dancong oolong cultivars – Phoenix Honey Orchid (AKA Mi Lan Xiang) and turning it into a black tea amplifies the sweet and fruity notes of the tea, whilst also giving it a light honey-like sweetness and a fuller mouthfeel that you get from a black tea.

The magic of cold brewing

Brewing tea is a balancing act. By adjusting the key brew parameters (leaf quantity, water temperature and steep time) you extract different compounds and elements within the tea. Over brew the tea and the tannins and bitterness can takeover, overpowering any of the more volatile aromatics in the tea.

By gently cold brewing the tea over 24 hours, we're able to extract all of the sweet and fruity qualities of the Phoenix Honey Orchid Red black tea, with just enough tannins and body to give the drink a more rounded mouthfeel.
